The macaron is a delicate french meringue-based sandwich cookie made with almond flour, egg whites, confectioners’ sugar, and food coloring.
With a crispy exterior and chewy interior the shell of a macaron should crack open easily but stay intact and not crumble or splinter when bitten into. Macrons can be filled with jelly, jam, buttercream, ganache, or a cream cheese frosting.
